Can I fit fire-escape hinges in place of a standard hinge?

Yes you can provided that the track width in the fixed frame is 18mm wide (that's the outer size not inner) and the length of hinge is available.
They will only fit side hung windows, for example where the hinges are fitted top and bottom on a window.

Can I use them on top hung windows?

They are not designed for top hung windows as top hung windows are generally easier to escape from.

Where do I need egress hinges (fire-escape)?

Any window that has been designated as a fire-escape by the building inspector should follow these guidelines. The building regs state that the window should have an unobstructed openable area that is at least 0.33 sqM and at least 450mm high and 450mm wide.

This must include the depth of the side of the frame when opened as this obstructs the opening size.

What is the difference between the H03 and H05 egress window hinges?

The H03 has a dual function where the window opens fully from the corner but also has an easy-clean button that allows you to slide the window across the frame for easier access to cleaning. The H05 just opens to a fire-escape full opening each time.

I have slimline window hinges - can I still use egress hinges?

It's unlikely unless the 18mm wide track can fit onto the frame. To our knowledge, at the time of writing, there is no one that makes a fire-escape hinge in a slimline 15mm version.
